Old School Butter & Sugar Pull Apart Bread 牛油砂糖面包 – Eat What Tonight (2024)

My mind was all about bread making since last week and when I metup with a friend recently, it was out of nowhere that we suddenly dwell onto the topics of bread making too.So that somehow affirmed my commitment to bread making comethe following weekend.

Old school breads are still my favourite despite the rising influx of artisan breads. Especially traditional breads like such, rich luscious butter in bread coated with a generous amount of sugar served in a pull apart form. I am particularly fond of pull apart bread as well since they are generally smaller in per piece portion and can be finished up easily.

Although there has been various kinds of bread making method, but I feel that no matter what method it is, as long as they are freshly made from home, they are still the best as it can be !

And I also realise that as long as there’s a so called “cooked dough” prior to making the bread dough, the result will yield a softer bread in which they can last longer too.In addition to the cooked dough, a twice proofing will also allow for a softer than usual bread which the softness can perhaps stretch up to the 3rd day still !

Although bread making is a laborious task, but the satisfaction yielded from the end results is beyond describable. The aroma of freshly baked breads that fills the entire household during the baking process is something that I am sure no one can resist.

Bread making is certainly not as intimidating as you imagine it to be ! And home baked breads is definitely more rewarding than any kinds of baked goods !! Enjoy !!

Author: Adapted from Alex Goh <Magic Bread> with modifications

Recipe type: Bread

Serves: 5

Ingredients

For the Overnight Dough:

  • 100g bread flour
  • 70g boiling water

For the Bread Dough

  • 300g bread flour
  • 100g plain flour
  • 80g sugar
  • 20g milk powder
  • 1 tbsp instant yeast
  • 1 tsp salt
  • 1 large egg
  • 175g cold water
  • 60g butter

  • some butter cubes (around 3-4g per piece)
  • some sugar
  • 1 egg yolk (for brushing)

Instructions

  1. Prepare the overnight dough by combining the boiling water and bread flour. Wrap it with a cling wrap and leave it overnight in the fridge.
  2. Add the bread flour, plain flour, sugar, milk powder and salt in a mixing bowl. Create a dent in the middle of the flour and add in the yeast. Mix well for approximately 30 seconds on low speed.
  3. Add in the water slowly before adding the egg. Beat on low to medium speed till a rough dough is formed.
  4. Add in the overnight dough and beat till it is well combined.
  5. Add in the butter and beat till an elastic dough is formed (when the dough can be stretched thinly).
  6. Remove the dough and further knead the dough with hands on a floured surface for approximately another 1 minute. Set it aside in a mixing bowl to allow it to proof for 40 minutes. Cover the bowl with a damp cloth while proofing.
  7. When the dough has expanded or doubled in volume, punch it gently to release the air.
  8. Separate the dough into 12 portions and set it aside for approximately 10 minutes.
  9. Further divide each dough into 30g each and place them in a 8 inch greased square tin. Continue until all the rest of the dough are used up.
  10. Allow the bread dough in the tin to proof further for another 40 minutes. To speed up proofing, you can add some boiling water in a bowl and place the tin over it and leave them in an enclosed area, such as in the microwave or oven (without power on). When the dough has doubled in size or touching each other, make a slit in the middle of each piece of bread.
  11. Add in a small piece of butter cube in each slit, egg wash the bread and sprinkle generously with sugar on top.
  12. Bake it in the pre-heated oven at 180 degrees for around 20 minutes or until golden brown. Unmould when the bread has cooled slightly. Serve hot and enjoy !

Notes

Salt will inhibits yeast growth. Hence, creating a dent or well in the middle of the flours while adding the yeast is to prevent it from direct interaction with the salt and "killing" the yeast. Place the salt at one corner in the mixing bowl can help to prevent that as well.

It’s alarming to know that 9 in 10 Singapore residents are consuming close to 2X the recommended daily sodium intake. Over time, our tongues will get desensitised, leading us to equate tastiness to saltiness and consuming even more salt. This can translate to health risks such as hypertension, heart disease and stroke. In support of @hpbsg ‘s initiative to reduce our sodium intake, here’s a lower-sodium version of my favourite dim sum - Steamed Radish Cake with Shiitake Mushrooms. By using aromatics and cooking techniques to bring out the natural flavours of the ingredients, we get the same delicious dish that’s wholesomely healthier. #LessSaltMoreTaste #hpbsg Ingredients (approx 4 servings) :600g shredded radish, squeeze out excess water and retain radish water1 small carrot, shredded 1 tbsp cooking oil 2 tbsp minced garlic 5 dried shiitake mushrooms, soaked in 500ml water till softened, dice the mushrooms and reserve mushroom water5 shallots, sliced 300g rice flour 70g tapioca starch 1-1.1L water (radish and mushroom water) 2 pcs lower-sodium vegetable stock cubes 1/2 tsp pepper A pinch of 5-spice powder Method: 1) Shred radish finely and squeeze out excess water. Retain the radish water. 2) Combine radish with carrots in a pan. Add in radish water plus more water to make it to 600ml and cook till vegetables turn soft. Drain and keep the water for the batter. 3) Combine both flours, radish and mushroom water to form the batter. Strain the batter to ensure no lumps. 4) Heat up cooking oil and fry shallots until golden brown. Drain the shallots and keep the cooking oil in the pan. 5) Stir fry garlic and mushrooms. Add radish, carrots and season with lower-sodium vegetable stock cubes, pepper and 5-spice powder. 6) On low heat, slowly pour in the batter. Continue stirring until batter has thickened. 7) Pour into a non-stick steaming tin. Cover with cling wrap and poke holes all over. Steam on medium heat for 1 hour or till the cake is done.

Add in 2 tbsp water if it gets too dry. 3) Add in minced meat and stir fry till done before adding the rest of the meat. 4) Add seasoning and stir fry to mix well before adding water and the braised meat bag/pack. 5) Cook till the sauce boils and reduce to low simmer. Add in the eggs. 6) Simmer further for another 45mins - 1hour with the pot covered. Remove the braised meat bag and spring onion. Serve hot with rice to enjoy !
