So glad to find your blog and you are so correct. My daughter in law is from Romania where her parents own a lot of land and every bit is planted with everything they eat. She cooks clean and can she cook! Her food is so much better than going out even to fine restaurants- all because of what she picks to start with and then cooks from scratch. So glad to see you gluten free recipes as she cannot have gluten plus is a diabetic- thanks for new ideas.

Fruits and vegetables are naturally gluten-free—so have plenty on hand for snacking. Rice, wild rice, corn and quinoa are gluten-free foods. Price Chopper does sell several different brands of gluten-free pasta. Meat, fish and chicken are also gluten-free, but some cold cuts do contain wheat starch as binders.
1) Read the ingredient label. Avoid all products with wheat, rye, barley, malt, or triticale in the ingredient label. Even if a packaged food product is labeled "gluten-free," you should check for these ingredients as mistakes in labeling can happen. The only exception for this is wheat starch.
Avoid "convenience" ingredients such as gravy mixes, soup mixes, bottled sauces, salad dressings, condiments, and seasoning mixes, since these may contain gluten-based ingredients. Check a list of gluten-free foods for safer ingredients.
People who develop celiac disease later in life can have eaten gluten for many years without having a negative reaction. Studies suggest that a shift could be caused by the body reaching its breaking point after a lifetime of eating gluten. Stress and other environmental conditions may also be a part of the change.
“Gluten is a protein found in the wheat plant and some other grains,” explains Rajagopal. Gluten is naturally occurring, but it can be extracted, concentrated and added to food and other products to add protein, texture and flavor. It also works as a binding agent to hold processed foods together and give them shape.
The simple answer is yes — potatoes are gluten-free. Gluten is a type of protein found in wheat, rye, barley, and other grains. Potatoes aren't grains, they're a type of starchy vegetable. That's good news for people who can't tolerate gluten because they have celiac disease or gluten intolerance.
